Jerk Chicken
What's the best Jerk sauce?
I love jerk chicken - it goes lovely with rice, noodles, salad, chips, pretty much anything. I can't find a sauce hot or spicy enough for my taste though. I usually buy the Reggae sauce or Tesco version to roast my chicken in - & recently tried the Schwartz Jamaican Jerk powder too - they're all nice enough, but ultimately a bit disappointing. I end up chucking loads of Cayenne Pepper & such on it to give it a bit of kick. Is there a better, more pokey jerk sauce out there? |

I can't see the problem in doing that. If something isn't hot enough then add your own chilli powder, sauce or fresh chillies.
The last one I bought was http://www.eatonsjamaica.net/jerk-seasonings.html It tasted ok but wasn't hot so I added my own extra spice. Next time I would make my own Here's a Jamie Oliver recipe from his 30 minutes meals program. I'd just chuck in some fresh chillis and chilli powder.
Or you could find a good recipe online, you'll have the outlay for the spices at first but after that it'll be in for any time you want it

Making Jerk paste from scratch can be complicated the first few times untill you get the hang of it.
Get some Walkerswood or Dunn's River jerk paste from a local indian food shop. DO NOT ADD YOUR OWN SALT.. these pastes have salt in them already. Best of luck

My favourite is Dunns River Jamaican jerk seasoning. I got mine in asda and it's one of their roll back items at the minute....£1.56 a jar if I remember rightly, but you don't need much as its very hot and a jar lasts for ages.
