freeze/thaw cake muffins?
I've bought a load of fruit with which I intend to make muffins, nut I was hoping to freeze some, can I just put them in a plastic box with a tight fitting lid after baking and put them in the freezer? Do I just thaw them by leaving them on the worktop? How will I know when they're thawed enough to eat?

yh just get one out and leave in a plastic container with lid on so it doesnt dry up..Ive done it before too, and their nice..You can tell if there not defrosted as when you bite it , it be frozen and you brake your teeth on it
..or depends how many you want to defrost..just leave them in container with lid on

Before I put mine in a container i wrap them in some aliminium foil, seems to keep the moisture in
