Leftover egg yolks
DD made a fab lemon meringue pie but made the lemon curd at home and the meringue at my house.
So, I have 5 egg yolks I'm not sure how to use up. Any suggestions? Ta |

Well as you can't freeze them - a home made custard, custard tart, use shop bought pastry if you can't be bothered with the pastry making!
Mayonnaise Hollandaise sauce Or boil some pasta and whisk the yolks with some olive oil & herbs if liked - when pasta is boiled drain and quickly mix the eggs & oil through to coat as in a sauce, well a dry-ish sauce depending on how much oil you like.

Hollandaise sauce, Key lime pie, lemon pie... can't think of anything very different. There are quite a few recipes that require extra egg yolks.. if look on net.
You can try making an avgolemono sauce which is lemony egg flavour. I would just chuck in an extra every time you use eggs , scambled, carbonara, quiche etc |

Thanks for all the suggestions. In the end (as per one suggestion) I added an extra yolk to scrambled eggs and a cheese omelette.
Espresso - DD made the lemon curd in her house in Croydon and finished the pie in my home in S E Kent. 5 egg whites makes one hell of a merigue topping! Thinking about it, I could have made my own lemon curd. Gordon Bennet, what a twit. Especially as she took the left over curd home with her. Ah well. |
