I'm planning on making oxtail soup tomorrow with this recipe:

The recipe says 1 1/4 kg of oxtail,I only have 600g. How should I adjust for less meat particularly for timings and quantities of the other ingredients.
Also, the oxtail has been in the freezer since the end of February and has been thawing in my fridge since this morning. Will it be o.k to use?
Lastly, does anybody have any other recipes for oxtail soup they can share with me?
