Greek lamb chops
The other week I was in a Greek Taverna, where I had the mixed grill.
On the mixed grill was a lamb chop, which was fantastic. What do they marinate the chops in, or what do they do to the lamb chop that makes it taste so good ? Do lamb chops from all Greek places taste the same ? I hope so, because any lamb chop I cook in this way will taste like the one I had !

A friend of ours does lamb kebabs marinated in yoghurt, garlic, lemon and oregano. They taste amazing, so juicy and tender.

A lot of it is down to the charcoal cooking, which always makes the meat more tender than our standard ovens/grills. Sumac is a very popular marinade in Turkish restaurants, Greeks often follow suit but add oregano. Try marinating the meat overnight in olive oil, sumac and crushed garlic. Might not be what you are looking for, but will still taste great.

Whyt do you want/need a definitive recipe.
Do what the others have said. Look up some greek lamb recipies and knockup a marinade or spice rub using the common flavours of greece. |
