Side dishes for BBQ
We are having a BBQ on Saturday and have a lot of people coming. I need to prepare some salads and side dishes (rice/pasta) to go with the meat. Can anyone please suggest some good recipes?

Yoghurt, garlic & cucumber dip - will go with lamb especially or anything tbh, vegetarians (I'm one) usually love it.
Cous Cous - put your portion into a microwaveable dish, 1 veg stock cube, little salt & about 1 tablespoon oil - cover with boiling water, just above Cous Cous level, cover with cling film - microwave 2 mins approx. remove c/ film, fork the Cous Cous to loosen grains, cover with a yea towel for 10/15 mins - fluff up again and add mint, seeds etc. ( feta, cucumber chunks, chopped tomatoes, olives) for example. A pasta bake? Buy a sauce for convenience and add a mix of grated cheddar & breadcrumbs for a topping before baking. Hoummous? New potatoes - boil, toss in olives oil & lemon zest ( add chopped mint or parsley too if liked). Tins of stuffed vine leaves from any Asian shop or Tesco. Salsa, buy or make Sweet chilli sauce Sweet chilli sauce mixed with Greek yoghurt is lovey. I'll keep thinking for you.

Just thought of some more -
Boil new potatoes, cut into chunks and mix thro' mayonnaise ( or creme fraiche or yoghurt) and sprinkle with chives or parsley and dried chilli flakes. Roasted mixed veg - chopped to similar size, toss in oil, sprinkle with salt, pepper and roast - add chopped herbs when ready to serve - goes well with the yoghurt/ cucumber sauce above. Quinoa or orzo pasta - cook like rice and add fresh herbs and chopped spring onions, cucumber etc as liked. Grate ready cooked beetroot ( the packs by the salad not pickled) mix in creme fraiche, add horseradish sauce as desired and a squeeze of lemon. Goes with anything but especially fish as in mackerel etc. Grate carrots into yoghurt add chopped parsley, season with salt. Par boil potatoes the night before - cut into wedges when cold - then sprinkle with oil ( I use rapeseed but olive oil or whatever will do) sprinkle with salt, chilli flakes, cumin powder, and baked until crispy. Boil some rice the night before - basmati is best IMO. Then cube some courgettes mix through rice with creme fraiche and parsley, season ( the mix should be fairly loose but not liquid) place in a Pyrex dish or similar - sprinkle with grated cheddar and bake until golden. The courgettes will cook if they are cubed not chunked btw. I watch all my cooking around 180c - 200c and really blast for a few mins on 225c if I need to. Btw, don't put any dressings on fresh salad leaves until last minute or the leaves will start wilting. You can also buy crispy onion bits to put through the salad - by the dressing sections in supermarkets, they have bacon bits or croutons you could toss through too - croutons might be by the soups or the oils/ dressing sections. Grate Parmesan over salad if you like aswell. |

I've made this old Delia recipe for pesto rice salad for countless BBQs and it always goes down a treat. It's great if you have time to make your own pesto, but I've also used shop-bought pesto and it was still very nice.

A nice coleslaw
(Mini) Corn on the Cob Potatoes of some type. New potatoes, spiced up and roasted through the oven. Similar with spicy wedges, or jacket spuds. |

I usually do:
Rice Salad Cole Slaw Green Salad Tomato & Red Onion salad Pasta Salad Rice Salad Recipe Boil Rice (about 4 oz) and as soon as it's cooked rinse through in cold water. Drain and stir in: 1 Tablespoon Mayonnaise, 1/2 cupful peanuts (wash through in hot water to get salt off), 1 can Green Giant Niblets which is the sweet corn and pepper mix. I usually garnish with sliced hard-boiled eggs and parsley. Use cooked green peas instead of peanuts if preferred. I also make a salsa by finely chopping a selection of vegetables and herbs and stirring in a french dressing. I use: red onion, tomato, cucumber, red/green peppers,celery, basil, and whatever fresh herbs I have to hand. A simple pasta salad can be made by stirring a can of Tuna salad into some cooked pasta Voilà! Quick and easy. I also buy a pot of potato salad from Tesco and mix it into some boiled cooled, diced new potatoes and then garnish with chopped chives.. It goes further, obviously, but it gives it more of a "home-made" flavour. |

I know it's not winter, not like you'd know, but I always do Jamie's Winter Veg Coleslaw with BBQ's. Beauty is that you can use whatever veg you want, I usually go for onion, some red cabbage, white cabbage and carrot.

Roasted Butternut squash, chorizo, puy lentils and green beans with parsley. BBQed Beetroot, feta, walnut and rocket salad with broad beans Tomato and Red onion with Mozerella and a basil type salsa verde. Green leaves, avocado and croutons with french dressing Cucumber and corriander with garlic and yoghurt Homemade bread Homegrown new potatoes and butter with herbs |

I usually put a big bag of frozen wedges in the oven, as I dont like salad and they go a long way. I tend to do a big mediterrean style salad with cherry tomatoes, feta/halloumi, courgette, red onion or anything else I have in. In our house we don't tend to have that many sides as we do so many meat choices, my father usually ends up throwing the salad into his burger or something

Loads of lovely suggestions there. Can't really top that but I do tend to do a bunch of jacket spuds when we're doing a BBQ, good for veggies, goes with all the salady stuff and also goes with any meat!

Corn, either on the cob or just heated up with lots of grated parmesan, fresh chopped chilli and fresh lime juice (or just put lime wedges out with it).
