Health Tasty and Very Easy

Now that have had my weekend breakfast of waffles, mushrooms, sausage, bacon, fried egg, black pudding, beans and onions, how about something healthy?

A couple of things I've been doing on a regular basis is a kind of salsa, chop spring onions, pepper, cherry tomatoes, mix in a bowl and some dressing like a french dressing and a dash of ketchup, takes no time and is really tasty.

Also, boil some rice in the microwave, takes about 10 minutes, 5 minutes into this, fry some veg, like leeks, mushrooms, onion, tomato, anything you like that fries pretty quick, fry this in olive oil, chuck the rice in on top when it's finished boiling, fry for a bit, chuck an egg in, mix it all up again, lovely.

Anyone else have quick and and tasty healthy recipes?

That's some breakfast! I don't think I could manage anything for the rest of the day if I started with that. Maybe a fruit salad at most.

Chopped onion
Juice of 4 limes
6 peeled, chopped large tomato
Bunch of coriander chopped
Chilli chopped

Mix it all around

Leave it in the fridge for a bit - lush!

Not keen on limes, oh but yes, some fresh coriander or something like it.

I used to always add coriander to my curries, but then one day Greg Wallace said on some program that it smells like cats pee, it's put me off I wish he'd never said it - pratt!

I used to always add coriander to my curries, but then one day Greg Wallace said on some program that it smells like cats pee, it's put me off I wish he'd never said it - pratt!
He is a prat and I'd advise you to take no notice of what he says - otherwise you'll be missing out on a delicious herb that adds that essential touch to curries and other dishes.............I've heard some people say they think coriander has an unpleasant smell.....I've never heard anyone say it smells of 'cats pee' though - typical of Wallace to come out with an analogy as disgusting as that Personally I've always found fresh coriander has a pleasant fragrant aroma

My sister thinks it smells of soap.

Some dishes certainly wouldn't be the same without it.
I remember reading an article by Nigel Slater years ago and he said something similar - that he didn't used to like the smell and taste of coriander but started using it in small quantities and gradually grew to love it......I will say although I've never found it has an unpleasant smell unless the leaves are rotting - some bunches definitely smell nicer than others........freshly grown coriander in your own garden smells divine. It just makes me angry when a plonker like Greg Wallace comes out with an inane comment that it smells like cat pee - he's supposed to be encourging people to try different ingredients not putting them off!
