Healthy receipes please

Hi there,
I'm trying to lose weight and make it a lifestyle change rather then a 'diet' but i really struggle with healthy meals and i was wondering if you all would mind giving me some ideas!
My partner and i are more or less vegetarian (only eat sausages and minced beef in the meat department) so if you could try and keep it as meat free as possible (or suggest alternatives) i'd be really grateful.
Also it would be nice if there wasn't any pinch of this pinch of that in it because i can't afford a whole lot of different ingredients to make one meal.
Anyway i really hope you can all help me cos im finding it really hard to find some to my specifications. Also i have concentration issues (medically diagnosed) so i find it hard to scour the whole internet as they all seem to blend together eventually.

Healthy food (for me) starts with a big filling healthy breakfast. Museli or brown toast and a couple of hard boiled eggs, loads of fruit (1 banana, 1 apple and 1 orange). On Sunday go for the full English, once a week is fine.

Someone in another thread mentioned that the BBC Good Food website has options to search for low calorie meals.

There's also a BBC Good Food book called '101 Healthy Eats' which I have and really like. It's like £4 on amazon. Honestly, I mainly look at the chicken recipes so I don't know any specific ones from it that would suit you off the top of my head.

From my book. I have made these and they were pretty nice. A teensy bit bland.

Falafel burgers:

400g can chickpeas, rinsed and drained
1 small red onion chopped
1 garlic clove chopped
handful parsley chopped
1tsp ground cumin
1 tsp ground coriander
1/2 tsp chilli powder
2 tbsp plain flour
2tbsp sunflower oil
To serve: salsa, pita bread, salad etc etc

Pat chickpeas dry, add to food processor along with all the ingredients up to and including the flour, as well as a pinch of salt, and blitz.
Shape into 4 patties with your hands
Heat oil in a pan, fry for about 3 mins each side.
Serve in a pita 'bap' with whatever sides you fancy.

Per serving 161 calories

I know it looks like a lot of ingredients, but most become staples and are used again and again.

Egg Flower Soup


6 tomatoes, sliced
500 ml hot vegetable stock
2 eggs, lightly beaten
1 tbsp light soy sauce
dash sesame oil
pinch ground white pepper
1 tbsp cornflour
2 tbsp cold water
1 sheets nori seaweed, shredded
100 g fresh silken tofu, sliced into 1.5 x 1.5cm chunks
1 large handful spinach
2 spring onions, finely sliced
Method

1. Blanch the tomatoes in a pan of boiling water for less than 1 minute, then drain. Finely chop the flesh, discarding the hard centres.
2. Add the tomatoes along with the hot stock in a clean pan. Bring to a gentle simmer, then slowly pour in the whisked eggs. Allow to set for 10 seconds, then stir gently to create long silken strands.
3. Season the soup with the soy sauce, sesame oil and white pepper.
4. Mix the cornflour with the water in a small bowl, then pour into the soup and stir well until thickened slightly.
5. Add the nori to the broth, followed by the tofu. Cook for another minute, then add the spinach and let it wilt slightly.
6. Ladle the soup into serving bowls and garnish with the sliced spring onions.


You can omit the nori and/or tofu if desired. This is good for people who are watching calories too.

Im personally a big fan of all of the recipes on the philadelphia website. Im not a good cook at all, but use their recipes as guidelines and edit occasionally along the way. There's different types of dish on there including a vegetable based dish section.

Those links are a couple of dishes that I thought looked nice, but there are loads more.

Other recipes to consider are the weight watchers/slimming world ones... there's normally a few online and there are books available... They're normally quite healthy.
