Thank you! (First leg of journey done, about to do second leg, they are still in tact).

The choc ones have Oreos inside. I was supposed to put jam in the vanilla ones but couldn't be bothered. I also really shoulda used my baby feet cutter for fondant shapes but I couldn't be bothered with that either (I already had leftover hearts).

I did the Macmillan Coffee Morning on Saturday (not the official date, but we can't do 27th Sept). It was hard work but SO much fun, it was amazing actually! I baked and sold around 90 cupcakes. I had initially made 60 but we ran out so I made more. I got one of our neighbours to print me out colour invitations to put through our neighbours doors, put them in the lifts, and invited our friends.

I decided on coffee, Oreo, Jaffa Cake, vanilla, and raspberry almond. We served free tea and coffee. After all the expenses, we raised around £115 to give to the Macmillan fund.

Those cupcakes are stunning and what a brilliant cause you have supported.
My local pub is holding a coffee morning on the 27th and I shall be baking some delights for them, but they will not compare with yours.

Fabulous looking cupcakes, Victoria, please can you share your recipe for the cupcake sponge, including the amount of flavouring to add, for chocolate, coffee, vanilla, any other etc.

Katie, I use a regular sponge mix of 1:1:1:1, I have posted it here somewhere, I will have a look in a bit and see if I can dig it out for you.

For chocolate cakes I replace 25% of the flour with cocoa powder.

Coffee - 1tsp instant coffee (mixed with the tiniest bit of water) per egg used.

Vanilla, almond, orange flavours - half a teaspoon of extract per egg used. I also add vanilla extract to coffee, and chocolate cupcakes - half a teaspoon per egg used.

thanks, think that was where I was going wrong with coffee cupcakes/sponge - using too much water then needing to add more granules to get the flavour. Sounds like a sensible approach of 1tsp w/water per egg used.
Looking forward to the recipe when you find it, no rush as need to cut down on the baking!

Camp coffee is also very good for cakes, as it's already in a liquid form. My Gran swore by it, and I keep a bottle handy for when I have to make a coffee cake for someone else.
Don't eat it myself as I can't stand coffee cake
