Patisserie Valerie
Their hollandaise sauce is to die for... i got some ready made but it just tastes like mayonnaise, and the packet mix tastes of nothing. Do you think they would sell me some, give me a recipe??

All hollandaise is just a combination of eggs, acid (vinegar /lemon) and butter so surely if the PV version is made correctly then it can't be that hard to emulate.
Thinking about it, PV is a chain so I would guess that it's not made fresh in store everyday to ensure consistency across all branches. |

All you need is eggs,butter,white wine vinegar,lemon juice, salt and pepper, a hob and a spoon. There are several ways to do this. I like to do it by putting a little water in the pan, some eggs, some vinegar, lemon juice and salt and pepper. Whisk them up and cook them for about 5-6 mins and then add very slowly some freshly foaming melted butter until it becomes thick and creamy. Towards the end, I stir in some wholegrain mustard. Some people like to use a food processor but I don't and pour very slowly hot butter into the vinegary eggs and slowly emulsify with the processor binding everything together. I like to put mustard in it but you can put in other things such as fresh herbs or capers. |

Patisserie Valerie use a bought in Hollondaise Sauce if I remember correctly its called Grade D'or and comes in a carton?? Dont ask me how I know this!
