You will have to have a gmail account for the market you dont have to actually use it for your email account.

Simply long press on the weather strip you have at present then when it highlights drag it to the bin that appears.

Then long press on a blank area of the home screen and select widgets you will see what you have available in the form of weather and clocks. if none of the suit you will need to download something like HD or beautiful widgets for extra options.

To remove a widget like the google one 'tap and hold' then drag it down to the rubbish bin icon that appears after a second or so.

To add a widget - eg a round clock, press the menu 'button' to the left of the home button. Then touch the add option, then widget, then swipe the row of icons that appears until you get to the clocks.

I think a google account is needed, I had one anyway, but don't use it for emailing.

Edit: Too slow, beaten to it

Hold down in a blank space, select widgets, then scroll through till you find the clocks, repeat for 'accuweather' i think default weather widget is. You have to have a google account I think, but you don't have to use the email atall.

edit: ooo snap :P

You need a gmail or googlemail account to use Google Play to download apps, but that shouldn't worry you. You don't have to use the gmail address, or the gmail app. You can set up the other stock email app for your normal email account. That's what I do.

I set it up to "leave messages on server", so that I can read and reply on my phone or tablet, and still have the email delivered to my PC where everything is filed. I also set the option to Bcc to myself (where available - on my HTC phone, but not on my Xoom tablet for some reason) so that any replies I make are delivered to my PC too, for filing.

Edit: Lol - I didn't see the other replies before I posted either - just think there are loads of us poised in front of our keyboards ready to answer questions like yours

You could sign up to a Samsung apps account. You won't need a gmail account then.
