Why didn't Nicole tell them the truth?
When the guy asked her how she came up with the decision, she just said "based on your performance just now" and then after they left she laid out exactly what was wrong. What's the point in doing that when she could have given the group the advice to take with them for the future? I know they are only supposed to be judges and not mentors, but that seems like something worth mentioning.

Because she wasn't paying attention and wasn't expecting to be challenged. It happens to all of us when we're taken aback unexpectedly. Thing is, she's been hired to be 'there', ready to give constructive criticism and to give good value to the viewers.

yeah, i thought that too. it was her perfect opportunity to give honest feedback, which that group so desperately needed and the guy actually asked for it too.
no doubt, if they were watching they probably are aware of her thoughts now, but it was such a cop out for her to say that afterwards.

Though to be fair to her, the guy did ask in an aggressive manner, but she needs to get a bit more feisty.

This was one of the most annoying things for me last night. She's paid to be a judge but she can't give her honest critique in front of the contestants?
