Mine did that, both via the phone itself (within settings) and via iTunes. It was coming up with stupid times of 6 hours to update or nothing, and then just failing. In the end I updated via the phone in the middle of the night and it did it all in a very short space of time. Sometimes it's the time of day, demand on the software etc. Try at a different time and see how you go. If it still won't update pop into an Apple shop, if you can.
Just select update and leave it to do its things as it does take a little of time to download and then install.
Depending on your download speed it could take longer than some other users did.
Don't update if you haven't already!!! Or at least check there are actually features you want and things like crap maps and that dumb VIP mailbox you can't delete aren't just going to annoy you...

Something about being able to see mails from specific people instantly.... but it will always sit in your list of mailboxes even when it's a function you have no use for. It's not exactly a big deal like that, but I just don't like things on the screen that serve no purpose for me

There are issues with the maps, but the majority of the time they're fine. If you find errors in the maps, log onto openstreetmap and correct them. Eventually they'll filter in to the maps Apple use, as they now base their data on openstreetmap, with routing done by TomTom.
I thought mine had stuck too, but suddenly it all happened. It took me about 25 minutes with 60mgb speed. I had it plugged directly into the computer too.

Try turning your antivirus and firewall off. I always had issues with Apple updates until I started doing this.
