Thanks,
So I'm guessing I will need an ipad 3 or mini then.

Not necessarily, EE will be selling 4g versions of their portable wifi units soon, could be a lot cheaper than a new iPad!

You'll need a 4th generation iPad or an iPad mini for 4G support in the UK.

Although 4G enabled, the 3rd generation iPad doesn't support the 4G frequencies used in the UK.

Do the 4 and the Mini support more than the iPhone 5, or will they also only have 4G LTE with EE?

iPad mini is same as iPhone 5. LTE bands 1, 3, 5, 13 & 25
As far as I know iPad 4 is the same.
Band 3 is 1800Mhz (EE)
The eventual (after the auctions) extra UK bands are band 7 (2600Mhz) and band 20 (800Mhz)
Dare say the iPhone 6/iPad 5/6 will support these.

It's a pain isn't it, I wonder when we will see SDR in phones so this wont be an issue anymore.

Exactly, iPad 3rd generation uses 700MHz and 2100MHz frequencies, 4G on EE uses 1800MHz frequency so you better check which devices support it before you buy your next tablet.
