What to do with 2 large mushrooms?
I don't like mushrooms but OH does.
What can I do with them? It doesn't have to be a "meal" but I'd rather not waste them. I was thinking to knock up some kind of garlic butter, spread that on, top with mozzerella and grill? Silly question time though - will grilling cook the mushrooms? and do I have to take the outer skin off (I would if I was chopping up mushrooms and using them in something?) Any other suggestions welcome |

You can wipe the outside with a dry cloth. Brush the outside of the mushrooms with oil. Then you could make a mix of philidelphia cheese with herbs or finely chopped tomatoes, bacon, or any similar mix. You could ( if not calorie conscious) sprinkle grated cheddar on top of your chosen filling. A dash of Worcestershire sauce is lovely too.
Personally, I'd bake but you could slow grill the mushrooms to make sure they're cooked. Garlic added to any filling is wonderful. I never, ever skin mushrooms! ![]() I've also just added Worcestershire sauce & cheddar then added a teaspoon of water, covered a microwave dish, covered in cling film and microwaved them for a few minutes - do a minute at a time to check they're not overcooking. |

Drizzel the gills of the mushrooms with a bit of olive oil. Sick in a hot oven on a baking tray
Wilt some spinach in a pan with a bit of butter and a bit of garlic. When wilted squeese out any mosture and mix in a few choped walnuts and some grated parmisan. Stuff mushrooms with the mixture and return to the oven for a bit.

For a delicious snack, sautee the chopped mushrooms in lots of butter and a clove of crushed garlic, and serve on top of toast. Or you could beat a couple of eggs together, and pour into the frying pan on top of the cooked musrooms, and cook lightly until just set. Season and serve up.

Large mushrooms are much akin to the consistency of steak, so I put some garlic and cheese inside it and either bake them in the oven or use that cheater's choice- the microwave.

In the past, I've made a mushroom pizza. I use the mushroom as the base, and put mozzarella, chopped tomatoes, ham, etc, and bake it in the oven! Really tasty!

They're lovely with the stalks cut out and filled with pate, chopped onion & grated cheese on top or crumbled stilton & diced ham with breadcrumbs on top. I usually add a slice of tomato on top, drizzle with oil and bake in the oven until juicy and golden - yum!
