The one thing that confuses me though is that, if Brendan isn't being held in custody during the Wedding (because there's nothing against him at that point if Doug only gets the murder confession a bit before the wedding)...then where is he?

Right, so reading it again it looks as though Ste over hears the convo between Doug and Shawnee, but still shows up for the wedding hence the 'Doug's as surprised as anyone when he does' although why he still plans on marrying Doug at this point is beyond me
and then after the wedding hears 'the truth about Brendan' witch is that he killed Danny. Sounds plausible, but it means that yet again they are changing Stendan's history, unless there is something on the recording that Ste didn't know.

I really don't get how he does this. He knew that Doug was trying to record him the other day didn't he? So surely he knows Doug would try again?

I don't think they're changing history, that would be far too big a thing to brush over.
I think it's more likely that on the recording Brendan says something else, maybe about how much he loves Ste (he's killed for him), and that's the truth Ste finds out.
