Toad In The Hole

I watched a program the other night and there was this 'authentic' Scottish pub in LA and their signature dish was Toad In The Hole.

When it showed a shot of it it was a giant yorkshire pudding filled with beef stew.

Wait a minute.... that's not Toad In The Hole!!!

I looked it up and what do you know. The original dish was meat and veg in batter or yorshire pud.

Well I never You learn something new everyday.


I always though that it was and has always has been sausages (pork) cooked in battter (which become a tray yorkshire and not the more common bowl type).

Just thought i'd let you all know

I used to make Toad in the Hole when I was a student...........always involved sauages in Yorkshire pudding

Like Cornish pasties was originally so we are told, meat, veg and potatoes in one side and a pudding in the other, not sure how they did that mind you. and the thick pastry was so the miners could eat it with their dirty hands.

Yorkshire puddings was a side dish and not meant to be put on the same dish as your dinner and covered in gravy.

Apparently the yorshire was the starter and used as filler so you didn't have to eat as much meat.

Also can be used as a desert and sometimes just eaten with honey/syrup.

The Bedfordshire Clanger is a type of suet dumpling with savoury at one side and sweet at the other.

I think that toad in the hole was originally a way of using up leftovers, so it was chunks of meat in the batter rather than sausages. Which presumably means that if the Yorkshire pud as a starter the previous day did its job of filling you up before the main course so you didn't eat too much meat, there'd be some of the joint left over to make the toad in the hole.

Mrs Beeton (1st ed, 1861) - which is public domain - lists two recipes for it. Both seem to be along the idea of batter over bits of meat (not sausages):

Toad-In-The-Hole (a Homely but Savoury Dish).

672. INGREDIENTS. — 1–1/2 lb. of rump-steak, 1 sheep’s kidney, pepper and salt to taste. For the batter, 3 eggs, 1 pint of milk, 4 tablespoonfuls of flour, 1/2 saltspoonful of salt.

Mode. — Cut up the steak and kidney into convenient-sized pieces, and put them into a pie-dish, with a good seasoning of salt and pepper; mix the flour with a small quantity of milk at first, to prevent its being lumpy; add the remainder, and the 3 eggs, which should be well beaten; put in the salt, stir the batter for about 5 minutes, and pour it over the steak. Place it in a tolerably brisk oven immediately, and bake for 1–1/2 hour.

Time. — 1–1/2 hour. Average cost, 1s. 9d.

Sufficient for 4 or 5 persons.

Seasonable at any time.

Note. — The remains of cold beef, rather underdone, may be substituted for the steak, and, when liked, the smallest possible quantity of minced onion or shalot may be added.

Toad-In-The-Hole (Cold Meat Cookery).

743. INGREDIENTS. — 6 oz. of flour, 1 pint of milk, 3 eggs, butter, a few slices of cold mutton, pepper and salt to taste, 2 kidneys.

Mode. — Make a smooth batter of flour, milk, and eggs in the above proportion; butter a baking-dish, and pour in the batter. Into this place a few slices of cold mutton, previously well seasoned, and the kidneys, which should be cut into rather small pieces; bake about 1 hour, or rather longer, and send it to table in the dish it was baked in. Oysters or mushrooms may be substituted for the kidneys, and will be found exceedingly good.

Time. — Rather more than 1 hour.

Average cost, exclusive of the cold meat, 8d.

Seasonable at any time.
