I really want Viv back on the show and so does many other people, so here's a few ideas of the reason for her absence and her return...
Viv had a nervous breakdown due to Bob and Terry rejecting her. On top of that Freddie Yorke, who landed Viv in prison, had resurfaced and was after Viv and threatening to kill her. Terry found out and tried to help her. Terry and Freddie got into a fight and Terry paid Freddie off so he would leave Viv at peace. Viv and Terry then went to the police (offscreen) in which the police gave Viv a new identity. However the police had hatched a plan to get rid of Freddie. Nick Henshall was hired as bate to cause an arson fire which would spread through the village and end up climaxing at the post office. They planned for Viv(now Maxine) to stay in the post office and drink herself to a sombre so it looked like she had fallen asleep and died. When Terry went into rescue Viv they both went out the back door just before the place went up in flames. A police car would be waiting the other side of the bridge which would pick them up and take them to their new hideout in essex. The two bodies found were a male and female police officer who mistakenly got caught up in the fire after they both went to look for Viv and Terry in the building. It was a mistaken identity of Viv and Terry so everyone thought they had actually died. This was the last we heard of them both.
When Kelly returned to the dales a few months later she had found out about Terry and Viv like two months before and was ordered by Viv to go and check on Bob and the twins, to make sure they were doing okay.
The reason why Viv and Terry have been away so long is because Viv is too scared to face everyone because of what's happened. She knew Bob and Brenda would be both mad at the pair of them.
One day Viv thought the time was right to come back and face up to what had happened. She came back supporting a new hairstyle. She got a taxi up to Home farm and walked the rest of the way down to the village... Upon her return she is glad to see the village again but isn't happy at the new cafe layout.
She sneaks in the back door without being seen and makes her way into the back room of the cafe. She cries for a bit. Bob comes in and see's Viv, he drops the plates. Viv says... "Bob, please let me explain."
"This had better be good Vivian Hope." says Bob.
