I've just realised that I've got a few eggs left at the back of the fridge that go out of date tomorrow. Instead of wasting them, I was going to boil them up tonight, and then keep them in the fridge for boiled egg sandwiches for my lunch at work into next week.

I take it they should be ok doing this? They'll be cooked and refrigerated before their use by date - I know some people don't worry too much about use by dates, but I'm not sure if it's the same with eggs, and if they keep after they have been cooked?

They'll be fine. We use them well AFTER the date sometimes!

They will be fine for ages - you don't have to boil them up tonight. As robin said, I also have used eggs many a time after the date stamped on them with no ill effects.

Put them in a pan of cold water. If they float, they are no good.

Yup, testing them in water is a much better way of telling they're alright than the use by date.

Eggs keep for ages after the use-by date, especially if you've had them in the fridge.

As others have said, the float test works best.
If they stand upright in water, they are off, or well on the way.

Half way through the month mine always go out of date, we eat them normally for at least another 2-3 weeks no problems. I would guess they would be fine even later than that.

Store them in the fridge to keep them longer - but if possible take them out and let them come to room temp before using.

And I have kept mine for at least a week after the use by date.

I was always told not to keep eggs in the fridge.
I never do, as I eat a lot of eggs, and they're nicer at room temperature, and essential if you're using them as an ingredient (e.g in cakes).

My mum keeps them in the fridge though, because she and dad only eat one egg a week each.
