Old thread, i know, but recently i've been experimenting with different spice blends because i miss the taste of KFC from my meat-eating days.
Over the weekend i tried the following recipe from one of the forums attempting to recreate the KFC original recipe and it was by far the best i've ever tasted (i've tried about a dozen recipes in the last couple of months). It tastes more complex than KFC, though similar tones are there, personally i think it tastes better!
All the measurements are in US spoons and cups (and for spices already ground to powder) because i don't have a spice scale.
BeckinOz's recipe:
1 tsp Black Pepper
2 tsp White Pepper
1/2 tsp Tarragon
1/2 tsp Mustard
1/2 tsp Sage
1/4 tsp Bay Leaf
1/4 tsp Cloves
1/4 tsp Nutmeg
1/4 tsp Ginger
1/4 tsp Garlic Powder
1/8 tsp Mace
1/8 tsp Corriander
3 tsp caster sugar
1/4 tsp salt
1/4 tsp MSG
1 cup floor
Other people who have made it claimed it had far too little salt, so i upped it to 1.5 table spoons, and the MSG to 1.5 tea spoons.
The result was amazing, although i'd recommend dropping the sugar down to 2 tsp. I think the recipe would also be improved by the addition of a small amount of Cayenne pepper, perhaps 1/4 tsp.
It was so good i ended up cooking a whole packet of
Chicken-style pieces and eating them in one go, bar 2 pieces i stuck in the fridge for a cold taste-test. Even better cold!
KFC use a milk/egg wash to keep the coating attached to the chicken, but with the chicken-style pieces i just soaked them in water for a few minutes then dropped them in the flour/spice mix, dipped them back in the water, and back into the flour/spice for a second coating.
Deep fry at 180C for 3 minutes (since the chicken-style pieces are ready-to-eat). If using chicken you'll need to fry a lot longer and probably want to use the milk/egg wash and also marinate the chicken in a buttermilk/salt/MSG solution.
I really can't rave enough about how good this spice blend is, and urge everyone who has the ingredients to give it a try. As soon i get some more chicken-style pieces i'm going to cook up another batch. I just wish i could get some plain soya fillets so i could have my old favourite again: the fillet burger.
