I've got a notion to make ginger wine. When I was a wee girl my dad used to make it using essence he got from the chemists in a small bottle. I'm sure he used Friar Tuck essence but I can't find this anywhere - I got a weird look in the chemist when I asked about it.

From memory my dad would boil up water and sugar, then when it has cooled a bit put the essence in and stir it.

If anyone has made ginger wine, could you let me know where to get the essence or what it's called and any tips you would like to pass on

I make my own ginger drink by peeling and slicing up root ginger (or put it through the garlic crusher) simmer it in sugared water ........either drink it hot or let it cool, pour into a bottle and keep in the fridge

I love gingery things anyway but someone told me that the ginger drink was a good winter drink for keeping colds at bay

The nearest co-op to me is a mini store at a petrol station. Is the essence an own brand? I'll certainly have a look when I'm there.

I love ginger. I've made a couple of infused ginger drinks in the past. I grate my ginger using a very small grater (like the ones people use for parmesan cheese) .

Oh and if Catherine The Dutchess of Cambridge is reading - ginger helps with morning noon and night sickness.

I've not seen this essence for a few years now but my mum would get it from the Co-op and that's probably the only place you're likely to find it now. It was called "Yulade".

Ginger wine was pretty much boiled water, sugar and this very dark essence and didn't need anything else. I grew up having this at Christmas too, delicious it was.

I used to get given it at new year when everyone else was having an alcoholic drink. I got given it in a proper glass and it felt more grown up that a glass of coke.

I still make it. The Co-op only have the wee bottles in for a short time and they tend to sell out quickly.I put a little bit of lemon peel in the water as it boils too.

My gran's trick was to put some into a brandy bottle which was empty but not washed out. So it picked up a bit of the taste.
