Depends on the quality and storage of the meat. Plus how much trust you have in the place you're getting your burger from.
For instance, you could see your burger being made from fresh chunks of beef, pattied up and put straight on the grill. There would be next to zero chance of a problem that there could be with a supermarket burger made from cheap cuts, minced up a week ago and being on the shelf until you cook it. |

Cooking eat each side may not kill it. That's why they are inspecting the practise. Having freshly minced burgers straight onto the grill shouldn't be a problem. |

I had a burger last night at a local restaurant/pub. Was so busy chatting didnt really look at what I was eating but was thinking wow this is really nice.
About half way through I looked down and noticed the burger was fairly raw in the middle. was tempted to finish it but thought better of it. It did taste really good though! |

Charring the outside adds flavour, but cooking the meat takes away flavour. Hence why a steak should spend 30 seconds a side on the hottest plate possible.
Personal preference I guess. |

I like my steaks rare, but mince should always be well-cooked as it carries a higher risk of contamination.

I used to scorch meat until all the taste was gone but if a place is posh enough to ask you how you want the burger done it's likely that it's safe to eat even at medium rare.
I had a lovely burger from Patty & Bun the other day which turned out to be m-r. Would imagine places like GBK would've gone out of business had they been poisoning some of their customers. |
