Gammon and Pork

one is a red meat, one is a white meat,
why such a difference... are nt they both from the same animal... ie a pig !

I wouldnt say pork was red meat, pork and gammon are the same colour when cooked.

If it's overly pink/red it'll be down to the saltpetre used in the curing process.

Also the joints used for ham/gammon are from the shoulder and leg. These are well used parts of the animal. The loin on the otherhand doesn't do any work.

Gammon and Pork are 2 different sort of Pigs.

Bacon is not from a Pork Pig.
