Anyone have any recipes that aren't totally shite? I'm making little salt caramel, peach and tarragon tartlets for Tuesday and I'm experimenting with the pastry just now. There's short pastry and there's bluddy sand

So damned difficult to work with.

Xanthan gum is your friend when making gluten-free pastry. It mimics the effect of gluten but without the added unpleasantness that people with gluten allergies/intolerances suffer. You can normally get it in the baking or "free from" section of most supermarkets.

My local Sainsbury store sells frozen ready made gluten free pastry (Dietary Specialties) and it is a lot more manageable than home made!

My local Sainsbury store sells frozen ready made gluten free pastry (Dietary Specialties) and it is a lot more manageable than home made!
