Ideas for a Starter?

Hi there!
I'm cooking my mum and stepdad a 3 course meal as their Christmas present as I don't get to see them so often (as they live abroad) and would like to spend time with them and do something for them that they'll enjoy (hopefully!)

I'm doing partridges in a red wine jus for main course with new potatoes and either roasted butternut squash or green beans, but I'm stumped for a starter.

My mum has a tiny appetite and is incredibly fussy. She doesn't really eat soup, can't eat cheese, pasta, dried fruit, carrots and various other odd things. I'd thought about just getting some smoked salmon of some sort but I want to do a special dinner party and just putting smoked salmon on a plate doesn't really take any effort so I'd like to do something!

Any ideas? Thanks in advance

Mushrooms stuffed with something are good. I would use cheese in them but you don't have to.
