Vegetarian dinner party for eight?

Can you guys help me please? For new year's eve I am cooking for myself and eight friends, all of whom are veggie.

I want to make a really nice three course menu. However my budget is limited (maybe 30 pounds top) and I don't have an oven.

So can you think of cheap veggie recipes that can be made on the hob or microwave? Much appreciated!

Hey NS

How about samosas for starters, potato and veg stuffed, or hummus with pitta bread sticks and salad.

Some sort of veg curry for mains with rice and naan bread.

An indian recipe site

Dessert, could be anything, like an unbaked chocolate cheesecake.

I make a nice Mango Salsa - peel and chop a large, ripe mango. Slice a couple of roasted red peppers (get them in jars at Lidl everso cheap). Put in bowl with some fresh chopped coriander and some fresh mint, also chopped.
Sometimes I add some chopped pineapple and some chopped red onion to make it go further.

Mushroom risotto can be as expensive or cheap as you wish just by changing which mushrooms you use.

Or a pasta dish again mushrooms or vegetables in a white sauce.

I was going to recommend a Thai curry. I made a vegan one a few months back. Replaced the usual chicken or pork with fried aubergine and left out the fish sauce.

Or you could try aubergine bake. Another of my veggie favourites.

OP has no oven so all the bake recipes are not possible.

You could have a buffet style nibbles like toasted ciabatta, with a selection of dips, houmous, blinis, balsamic vinegar and olive oil dips etc. Then you could have a few salads on serving tray's. I did a lovely salad on xmas eve along with other things for people to help themselves, went down a treat. One was sliced beef tomato, sliced fresh buffalo mozzarella, sprinkled with fresh basil leaves and drizzled with balsamic and garlic oil. Then in the middle I had green and black olives with some stuffed peppers and sundried tomatos from sainsburys. People loved it. I also griddled on the hob some haloumi and roasted peppers.

Then for main as you don't have an oven I suggest some lovely fresh pasta or gnocchi. Or a lovely veggy thai curry which is really easy to make and cheap. And you can serve the curry with nan, popadom, Thai crackers etc.

BUT if I were you I would defo make some lovely Mexican food. Which is very veggie friendly........ There are TONS of recipies on the net which all use hob rather than oven.

So for starter you could serve a huge bowl of nachos with cheese (use both cheddar and mozzarella, 30 secs in microwave if no oven) and red and yellow griddled (on hob) peppers with a handful of FRESH coriander sprinkled on top. Then on the table along side the big natcho bowl have a jar of jalapeno peppers, sour cream, guacamole, salsa (home made is better - the poster with the recipe in this thread would be yum with it). People can dig in and help themselves.

Or you could have quesadillas which are done in a pan toasted (or griddled if you have a griddle pan).

Or you could have both!

And if your guests eat prawns you could serve some spicy fried prawns in chilli and garlic to go along with it..seved with a blob of sour cream and coriander.

Serve the starter course with mojito cocktails (lots of recipies on web).

Main course is very easy and cheap - FAJITAS and CHILLI CON CARNE!! Obviously you guests are veggie so just load them up with veg. Make the fajitas warm in micro or in a pan. Pop in middle of table. Then make the main part with peppers, onions, coriander, sweetcorn, natcho crisps, mushrooms etc and have that in middle of table so folk can help themselves. Then the veggie chilli I am sure there are lots of recipies online for that, again just serve a big pot on the table and a big vat of rice and people can help themselves.

. Then on the table have a selection of bowls with lots of grated cheddar, fried haloimi cheese, fresh coriander, guacamole, sour cream, salsa, jalapenos. and again people help themselves.

Serve this course with Margaritas!

Then pudding - the obvious, key lime pie. Served with tequilla sunrises. (if you don't want to make this both sainsburys and m&s do a lovely keylime. And G:U do a lovely LOVELY mini version as your guests might all be too full after the main and starter.

Aperitifs....tequlila slammers!

And you can make it fun by making everyone wear fake mustaches and sombreros. And you will all be sloshed on the mexican inspired coctails and slammers!

If you had an oven there are soooo much more foods you can do but this is easy, cheap and no oven required! Google mexican food, very easy and very cheap. .

New year is about fun and friends, having food like this were people hepl themselves is sociable and good fun.

Big veggie curry or chilli is probably the easiest and cheapest option.

Also why not ask your friends to bring something along as well?
