I wish my eggs wouldn't go hard and brown when I fry them....any tips?

Hmm, very hot sunflower oil in a frying pan, fresh egg and use a spatter guard. Baste the white but not the yolk. Perfect if you want really runny yolks.

I would put the chopped onions in the pan first and fry them for a bit before I add the egg. Then just as the omelet is cooked sprinkle grated cheese on top and fold the omelet
over so that the cheese melts.

The best thing ( not the healthiest perhaps ) to fry eggs in apart from a little oil, is the drippings from roasting a chicken. When you carefully pour off most of the fat from the roasting tin ( to make your gravy ) pour this spare fat into a mug / small bowl, cover with clingfilm and keep in fridge. Each time you want to fry an egg, or anything really, put a blob of that in your pan. Keeps for ages and makes what you fry tastier !
