Can you not freeze it?

When you need it just get a portion out and gently defrost it in the microwave on the lowest setting, just enough to be able to slice it. it can finish off defrosting in the lunchbox and will stay nice and fresh

Why bin it? Just use it up in the next few days. How long do you think hams normally last (they are preserved by salting and should last for ages, otherwise it would be roast pork)?

They will last for years if not cut, but once you start slicing them they will be just as liable to infection as anything else.
