Cooking, Freezing then Reheating

Ive got the crap shifts at work next week and I dont want to ruin my meal plans.

If I cook a few chicken breasts and a load of brocelli, then freeze the lot in tupperware individually etc

is it ok to defrost them thru out the day at work then mircoware it?

Yes that is fine for the chicken as long as you cool and freeze fairly quickly, within a few hours at most. You may find the chicken gets a bit dry in the freeze, thaw, reheat process though.

Brocelli is likely to turn to mush. Is it not possible to cook it at work. You can microwave steam it a few minutes, or cook it 80% through at home before you leave and finish at work.

For that meal it doesn't seem that you would save much time. A steamed/poached chicken breast and the same with brocolli wouldn't take much longer.

You could even cook them both from fresh in the microwave with a bit of trial and error.


Reheat meals are good for stews/ragus/curries like bolognaise, chilli, hot pot etc.
