Fill to the top with water Bring to a simmer slowly until a scum appears on the top. Skim off the scum. Add the cubed swede and carrot and cook a little. Add salt to taste Add the cubed parsnip and potatoes and cook more Top up with water if necesary Add the sliced leeks and cook for a further fifteen minutes Five minutes before serving, add parsley and (optionally) a teaspoon of flour made into a paste with a little water. This will thicken the liquid a little. Serve hot with bread and cheese. Absolutely gorgeous the next night as a 'warm-up' with all the flavours infused and delicious. That sounds lovely - and I'm vegetarian! ![]() Oh gawd - I may be on the turn!

Into a large saucepan put two chopped red peppers, 4 chopped carrots, 1 chopped butternut squash, 1 large onion(chopped) and two whole cloves of garlic and any tomatoes which you want to use up or have gone too mushy for using in a salad or slicing. Then add 2 veg stock cubes, a pinch of chilli flakes and a tin of chopped tomatoes. Using the tin from the tomatoes, add two tinfuls of water. Boil and then simmer for about 20 mins then blend with a hand blender to whatever consistency you like. This makes 5 decent sized bowls of soup, and if you don't use it all together it freezes brilliantly! That sounds delish - and easy too. I'll try that one. Thanks!

Yes, some things aren't worth skimping on because they do make a difference. I bought some cheap coconut milk in bulk and was wondering why things weren't turning out as well as normal, then there was only one tin left in the supermarket so I bought that and it tasted so much better.
I had to buy some dried/powdered coconut milk to take with me - it sufficed - expensive and no way as good as Sharwoods low fat version IMO.

I love making home made soups etc particuliary when im not feeling 100%..Like run down or getting a cold, a nice hot bowl of soup does the trick..Apart from actually standing and cooking it when you feel rotton lol

Mr B and I have soup as a main meal once a week. Sometimes I make it chunky with lots of potatoes, sometimes I liquidise it and sometimes I chuck in a can of Tesco Hot & Spicy Mixed Beans.
Sometimes I use those dried soup mixes but not often as I never remember to soak them the night before. |

I've ruined a couple of hand blenders by using them in hot soup. It says not to use them in hot liquids. I think it melts a washer inside or something.

I use a potato masher sometimes if I make Potato and leek soup. It's not too smooth but still has some "bits".

For me, the best thing about soup is that virtually anything can go into it. It's a great way of using leftovers and things found lurking in the back of the fridge.

Ohh i have been making more chicken soup ( in the pressure cooker )..not feeling 100% still and all i want to eat is homemade chicken soup..makes me feel better, and i did another batch yesterday,that PC comes in handy latey

I got some leeks and new potatoes today to make a panfull of soup
I made a panfull of curry today and put the white bits of the leeks in that and the green bits are for the soup................ Only trouble is that I've made so much that it's Curry and Soup for the next 3 or 4 days................
