Packed Lunches

I'm starting to get bored of sandwiches every day at work so i'm looking for ideas of other things i could make in the morning and eat at lunch.

Thinking of things like salads or soups but any other suggestions are welcome!

I sometimes make chicken in a tikka paste and greek yogurt mixture on a night, and then have that in a tortilla wrap with salad. Very nice indeed.

Can be eaten cold, or reheated in your work microwave.

pasta, wraps, pittas or if you dont eat cereal in the morning take a tub with some for lunch

Try a chinese noodle salad with raw peppers, blanched green beans & edamame (you can chuck these in when the noodles boil so it only takes 2 minutes) then drain & smother in a dressing of soy sauce, sesame oil & either honey or sweet chili sauce depending how hot/ sweet you like it.

My hobo version of this is a cheap packet of Indomie noodles made with some frozen veg (microwave them a bit before adding the noodles and boiling water) and slathered in some hot sauce or other. You can add tuna, smoked salmon, chopped chicken etc. if you feel the need.

If you don't have access to a kettle or a microwave then I dunno. Pancakes? Crepes? Crepes slathered in hot sauce? Or peanut butter? Or nutella? Yeah, I'll regularly eat any of those three.

When I get bored of sarnies I make myself salads. Just regular salad stuff, lettuce, cherry tomatoes, cucumber, spring onion, peppers, coleslaw, potato salad etc and then I usually put smoked mackerel or prawns in. The other week Tesco had their cooked king prawns on offer. I got a pack in garlic butter and a pack in sweet chilli sauce. They were really nice in the salad. Their piri piri mackerel is nice too. Nice and easy to prepare too, just a bit of chopping. After I've cooked dinner I can never be bothered cooking something else to take to work for lunch.

Our firm once had to collect a cabinet from a well
known City of London sandwich bar - where it had been stored next to the kitchen- When we opened the drawers of the cabinet each drawer appeared to have a layer of fine gravel more than an inch thick - Then someone realised
it was in fact mouse or rat droppings.

Theres always the unexpected !
