I've read that this is possible, but can anyone tell me whether I can do it with the kit I have? I'm a bit of a Sonos beginner.

I want to be able to listen to Sky output around the house without having the TV switched on. But when I am watching Sky TV, I want the sound to output from the TV, rather than Sonos

I have a bridge and a Connect hooked up to my hi-fi (with the standard audio cables) next to the TV. I have Play:3's in my kitchen and study.

Thanks for any advice.

You need to connect the Line in phonos of the Sonos Connect unit to an output of the Sky box. How you do that depends on what connections are available on the Sky box.

If it has a pair of phono sockets for analogue audio out then that is the obvious connection to use. The image on this webpage suggests a Sky HD box does have such outputs

the red and white sockets on the left near the mains input.

So a simple stereo phono to phono lead ought to do the business. If you are using the Line ins on the Sonos Connect for other things then you might need a switch to extend it's capabilities.

This won't in any way affect what is coming out of the TV. Nor does it depend on the TV being switched on (or even physically present in the room ). The Sonos and TV would be partially independent of each other. The only restriction is that both devices will always get the same audio from the Sky box. But otherwise neither affects the other's operation.
