On Orange they have GPRS Consumer which is capped and then GPRS Premium which is uncapped, so the speed on T-mobile must be managed in the same way rather than the APN.

On Orange if you get the overseas team they will add GPRS Premium even if your not entitled to it.

Wether the T-Mobile system lets you have things your not entitled to I don't know :/

Can you manually change the iPhone APN? Mine's not there. Ability to edit it has een removed by EE. Is it different on different plans.

Don't know how I have done it but I have managed to get rid of the cap. I went to the site about entered the details for 3 mobile then added the profile. It didn't work so I removed the profile from the iPhone and my speeds are uncapped now!! Very happy
