Where's my omelette?! (The omelette appreciation thread)

My perfect omelette is with ham, onions, mushrooms, tomatoes, red peppers, green peppers, peas and sweetcorn.

For those of you here who like omelettes, what do you like to have in your omelette?

That sounds more like a Spanish omelette - i had a mature chedder cheese omelette tonight and it was delicious.

Cheddar in the middle so it's all melted together and oozes out when you cut it open. Mmmm.

My family are the experts at making omelettes. My parents always favoured the 'soufflé' type, where the whites are beaten first, and then then yolk carefully folded in, resulting in a very light, airy texture when cooked. I prefer the traditional method. My niece and nephew were able to cook perfect, golden omelettes unaided when they were six and eight years old.

I make my omelette with finely chopped onion, ham and mature cheddar. Served with ketchup and dressed salad leaves. Bread on the side, perhaps.

I am not keen on the idea of Spanish omelette with potatoes...

That sounds nice, and I have feta and spinach in the fridge. Does the feta melt nicely? I have only ever eaten feta uncooked.

To some degree, but not completely. It's a nice salty contrast with the spinach which I just put in raw.

Straight up mushrooms does for me - OK , with some grated cheese sometomes.

A fritatta with sliced chorizo as a treat.

I like a simple one with mature cheddar and tomato or mushrooms or bacon. I love a Spanish frittata type one with onion, potato, peas, halved cherry tomato and spinach.

I haven't had an omelette for years ever since my mum made me a dodgy one but I really fancy one now. I would have one with cheese and mushrooms with tomato sauce on the side.

Lobster and parmsesan is my favourite omlette. I only have it a few times a year though.

My favourite is one that my husband is not too keen on - I use only the whites of the eggs (3, usually, or sometimes I use egg whites from a carton) with sautéed spring onion, mushrooms and a bit of regular white onion too. Lots of salt and pepper, plus a pinch of oregano if I'm in the mood.

My husband thinks it's horrible without the yolks but I actually prefer the taste!

I cant seem to master the art of making omelette, but luckily its the ONLY dish my husband can cook. He always adds bacon, mushrooms and red onion. Its gorgeous.

I can't master a 'proper' omelette, either - I can only really cook them frittata-like!
