Hi, sorry if this has been asked before (I looked back a few pages but couldn't spot anything), but I was wondering if anybody had a good recipe /way to cook crispy duck?
I have 2 duck legs (Gressingham, although not sure if that's relevant?) and I want to make crispy duck with it for supper tonight.
I've already done a quick easy light marinade (Chinese 5 spice and fresh ginger), and they are in the fridge now.
When it comes to cooking, rendering the fat in particular, I'm not entirely sure what to do.
Is it literally just a case of hot pan, skin side down until loads of fat comes out?
And then into the oven for a couple of hours?
I've cheated and bought a bottle of hoisin sauce, but will make the pancakes myself (admittedly I've bought back up ones, just in case).
Any tips would be very much appreciated, thank you
