I was told by the Dr that I need to eat more Iron enriched foods so I have been concentrating on these types of food , any way I decided to get some spinach only now that I have I have no idea what to with it

could I have some suggestions please could I have some other iron enriched foods suggestions

I love this recipe for a salmon, spinach & cheese bake - it's healthy, quick and easy - and tastes great!

My OH hates spinach but barely notices it here and the salmon is good for you too

One way i eat more veg is to incorporate them into my mashed potatoes

For example in the olden days I might have had mash made from 6 potatoes................but today i had mash made from 3 potatoes, 2 carrots and 3 big leaves of savoy cabbage...........you only use one pan as well so it saves on the washing up...............

oo what a great idea thankyou I do eat stuff like savoy cabbage , brussel sprouts and cauli already but dr said I should try and have more variety and eat them more often as I don't really eat red meat actually I rarely eat meat at all these days

I made a spicy beef stew for tonights dinner and threw in a bag of spinach 5 mins before it was done. As Suki says, it is hardly noticeable as it withers away to barely anything.

If you like salads, you can substitute spinach for lettuce or buy a bag that includes spinach leaves.

Sautee spinach (my mum usually uses frozen pre-cooked ones), with garlic, in a bit of butter; then mix in a little parmesan cheese (grated one I'd say), add salt and pepper to taste. My sister loves them like that.
I think that's how my mother cooks spinach usually.
If you use fresh spinach, you need a lot to make a decent portion.
Spinach can be used to make stuffing as well, after you blitz them with ham and cheese. This is a very nice stuffing, it goes well with chicken and turkey in my opinion.

I made braised beef with mixed root mash and spring greens the other week and it was lovely.
I added some onion, garlic and vinegar to the greens. You could use spinach, cabbage, kale etc.

Spinach is very versatile. You make little pizzas, quiches, pies, omelettes,souffles salads,.

It can be stir fried with ginger,sesame seeds and garlic.

Steam it with some bacon.

Put it into a risotto.

Make pasta with a spinach pesto.

You can roast it in the oven with tomatoes and asparagus.

It can be poached with eggs and cheese in a ramekin.

Eggs Florentine

Eggs on a bed of spinach on a toasted muffin with Hollandaise sauce

Eggs yolks are rich in iron.

Many breakfast cereals are enriched with iron. Have some with dried prunes or raisins. They are also high in iron.

Yep, I often chuck some in curries and pasta dishes too. I also add it if I'm making a Spanish frittata and minestrone soup.

Pile it raw on a granary bread sandwich with smoked mackerel, horseradish sauce, raw onion and pickled beetroot. It's probably the healthiest sarnie in the world.
