Cooking for one

Its a pain, but I use the freezer a lot which helps. Sadly there are a lot of recipes that don't freeze well - but stew certainly does

I do a big batch of something nice, get about 4/5 potions out of it and freeze it. Cooking for one can be uninspiring but make the effort and you will be pleased you did when you are tucking into that nice tasty stew.

Well i was going to suggest the freezer too. You can use leftovers for lunch at work as well if you have access to a microwave.

A stew/curry/ragu will last in the fridge for a week so if you cook two or three portions then you can have one on the day and leave the rest for a few days. If there is too much to eat then a portion may go in the freezer or to a family member.
It's what I do because don't like to eat the same meal day after day. |

I hate when people go "I would cook, but can't cook just for myself" If you like to cook and eat home made food, what difference does it make if you cook it for five people or only for yourself?

Because it's difficult to cook one portion of a stew.

The great thing about cooking for one, is you have loads left over to stick in the freezer for the days you don't feel like cooking but still want a proper meal. Other than that, have a few staples in your cupboard, fridge and freezer that mean you can rustle up something tasty really quickly - frozen fish portions, lemons, onions, garlic, pasta, veg, noodles, herbs, cream cheese, creme fraiche or yoghurt etc. |

a chicken breast cut into strips. cover in beaten egg, and flour. shallow fry for 8-10 mins. better than any nugget you will ever try for a lot less.
lovely hot or cold ---- few fresh tomatoes, tin of tomatoes, half an onion, bit of garlic. cook slowly for up to an hour. makes a lovely pasta sauce. |
