Cold Lunch Alternatives

I have Colitis and have modified by diet extensively by cutting out a lot of dairy and wheat which subsequently means I no longer eat bread or rolls. Instead, I eat two large Snack a Jaks for lunch which haven't caused me any problems with my symptoms.

However I am now getting fed up of them since they don't sufficiently fill me up and I would now like to try something different. I did buy Oatcakes but they were extremely dry. Because I've cut out diary and wheat, it means I no longer eat breakfast because likewise I haven't found a suitable alternative, so lunch is my first meal of the day. Again finding toppings for bread alternatives proves to be problematic too so would appreciate suggestions as to what I could try.

Just because you have cut out dairy and wheat why don't you have breakfast?
Soya milk - rice milk or similar put on cereals other than wheat - try porridge or home made muesli with soya yoghurts.
What do you eat now for lunch along with rice or oat cakes - do you eat at home or work?
I have something similar and have not eaten dairy for years and cut down on wheat not cut it out altogether.

Great breakfast ideas here, plus you could have a whole variety of fruit. Breakfast is such an important meal, you should really try not to skip it.

I eat lots of ricecakes, ryvitas etc and tend to use generic sandwich fillings as toppings - tuna and cucumber, ham and tomato etc. You could have salads, roast veg/veg crudites with dips, jacket potatoes. There are so many gluten free products out there now, though they do tend to be rather pricey. I haven't given up wheat or dairy before and can imagine how daunting it may seem but there's plenty of lovely breakfast and lunchtime meals you can make yourself

Re the breakfast thing, I have an Alpro (soya) yoghurt with home made muesli (oats, puffed rice, raisins, walnuts, dried apricots, dried dates and flaked almonds). Usually I'll have it with a handful of blueberries.

It's really filling and generally keeps me going until lunch (sometimes I'll have a clementine between breakfast and lunch).

Sorry, that's no help in terms of cold lunch ideas is it!

ETA: Have you tried quinoa? You can use it in place of cous cous so it can be the basis for cold salady things. It's a grain and is gluten-free etc.
