I like a lot of different German sausages with the sweet mustard and the potato salad and all that good stuff, but I'm not a fan of the Weisswirst, I think cardomom has no place in a sausage.
As has been said, you don't eat the skin, Your actual Bavarians suck the meat out of the skin, which looks a bit suggestive to us, so unless you want to look like a bit of a wannabe Bavarian, don't do that. Just cut the sausage lengthways and the skin will come off pretty easily.
