Well, just like any other version, if you say something that could potentially be offensive to viewers in the outside world, there may be serious repercussions for the producers. Remember N*****-gate?
As for Canada's censorship laws, they are much more laxed than in the US. I guess you could say we have a similar structure to the UK's 9pm watershed (though many programmes have copious, uncensored swearing even in the afternoon). But keep in mind that Canada has 6 timezones, so the only way for something to be completely uncensored is for it to air after 9pm Pacific Time, which is the westernmost timezone in the country.
