Making stock from chicken bones
Andy Birkenhead
02-03-2013
I defrosted a bag of chicken bones today. I also roasted a chicken for tomorrows dinner.
Can I use the raw, defrosted bones and the roast chicken bones together to make a stock for soup ?

I guess Andy might be worried about the cross contamination of raw and cooked, but since you are boiling them any bacteria/germs will be killed. I recall asking a similar question about stuffing that had raw sausagement and ham - same answer i.e. heated sufficiently to kill whatever is there.

Well yeah, as long as you reach the temp to kill stuff, then it doesn't bloody matter what you put in it.

The question has already been answered, but I can't understand why you would roast a chicken a day early.

Thanks for the replies
Yes, it was the cross contamination I was worried about

Many will disagree but some of us like the more developed flavour of roast chicken when it's been cooked the day before. I alway cook our turkey on Christmas eve.

The quick and easy way to do stock is buy the chickenpot knorr from asda etc, and add it in with the water..( i dont see the hassel in doing what the OP and others do for stock )

if your making chicken soup i use the pressure cooker and cook the chicken thighs first ( they fall right off the bones) with an onion in the basket for flavour..Cut it off the bones and add the potatoes and carrots and the stockpot( again with the onion)..I add peas and put chicken to it, all yum

but each person does it different i suppose

If you have the chicken carcass anyway it seems a shame to waste it.

I like things like the Knorr stockpots if I don't have my own stock available and don't want to roast a chicken. But if I'm doing a chicken anyway, I'll then make stock and freeze it so that I don't waste the carcass.

I still dont understand what the problem is, because you are treating all the meat as though its raw right?

It would be bad if you cross contaminated in the other direction and got raw meat on your cooked but that isn't what your doing.
