Is there a way to bulk out buttercream icing to make it less unhealthy?
I'm going to make a cake and put buttercream icing on top (butter and icing sugar only). However, is there trick that you can use to add volume to the amount of icing, so that you end up with less butter and sugar per portion, if you know what I mean?
Can you add something while you whip it, to bulk it out so you end up needing less of it? |

You can use Splenda, light butter,vanilla extract and fat free cream cheese.
Or simply just butter,sugar and fat free cream cheese. |

The 'buttercream' recipes from the book 'Vegan Cupcakes take over the world' use less fat than other recipes I've used, and adds soya milk to make it the right consistency for piping.
Though, I must admit that for vanilla frosting I don't like this frosting quite as much as recipes that are just margarine, icing sugar, and flavouring/essence. It works well for chocolate frosting. If non-vegan, just substitute a bit of normal milk for soya milk of course. |
