Char grilled steak
How do restaurants get that char grilled flavour with a steak?
Do they actually have a char grill / BBQ in the kitchen? If yes, seems a lot of fuss just for the occasional steak. Just wondering if I can get the same effect. I currently use a very hot griddled pan for my steaks. |

Yes they have a very, very hot grill.
A popular steak restaurant could be doing 50 to 100 steaks per night as well as other grilled items. |

Usually, I just do my steaks on my trusty old skillet. Get it smoking hot first and then drop the oiled and seasoned steaks onto it for 2 minutes a side. Using a pair of tongs to turn it so as not to let the juices out.
However, on occasion (mainly when cooking for guests) I do use the sous vide method and when done right that can produce the perfect steak in my opinion, it's just time consuming. |

Yea, saw masterchef tonight and they had an indoor bbq oven that they lit and everything, I want one.
Will just stick with my screaming hot griddle pan and a seasoned steak, that does the trick. |

The key to a good steak is cooking it on something ferociously hot. I use a griddle pan that has been on for at least 20 minutes, restaurants would have something even hotter.

I have a cast iron griddle that sits over two gas rings that achieves pretty much the same thing as long as I have the patience to let it get literally red hot. The griddle was less than £20.
