That does look fantastic. However, I'm with the WI on this, a Victoria Sandwich should only have jam in it, no cream or buttercream. Just moist, buttery sponge and raspberry jam for me.
A close runner up is lemon drizzle cake.

Norbitonite, I used to insist on the WI version as well, but after the first time adding whipped cream I just have to have it that way now!
