1 onion, finely sliced.
1 bayleaf
1 clove of garlic, very finely chopped(if you buy a really cheap tub, about a quid, then put your garlic in it, it will stay fresh for about 2 months. Also you just cut the end off and will peel easily)
1 tin of cheapest tomatoes
1 teaspoon of oregano
1 veg stock cube
1 small cup of reserved pasta water

Put onion in a pan (i like to use a gravy pan or a small pan) with a small amount of oil/butter, get it sizzling, then turn down and put a lid on. Leave it for about five minutes then add the garlic. If the heat is too hot turn it down. Let them all go soft then add the tomatoes, i like napolina. Add the bayleaf. Oregano and stock. Then reduce a little.

Personally i put this in the oven for 1 hour at 130

When out of the oven, scrape the sides down into the sauce.

This will make a great covering for 250 grams of pasta, just stir in and add a bit of reserved pasta water. Although the sauce might be a bit waterty, no worries stir the pasta in and it will thicken

It is delicious, if you want some protein, add a quick fried salmon fillet, very cheap at the moment.
