I cannot find my bun trays anywhere???

Can I make one big Yorkshire pud in a larger ceramic dish? It's what I would normally make a lasagne or shepherds pie in (to give an indication of size)

You most certainly can, I always do my Yorkshire's in one big dish. Lasagne size Is fine.

Have you got a metal dish, something like a roasting tin you would do a joint in ? The metal might conduct the heat better than ceramic. I do Toad in the Hole in one of these and it works a treat.

Absolutely. I make "toad in the hole" in a large dish occasionally.

I must admit, when I was much younger, my mum was always nagging me to not eat Yorkshire Puddings with my hands, (I hate eating them with my knife and fork) although sometimes, she would be OK with me eating Yorkshire Puddings with my hands.

Im mid forties and I still pick the delicious things up with my hands
