Potato / rice / pasta free dinner ideas
Hi guys,
Not been here for a while, but I'm in need of some dinner ideas and know you're the best bunch to ask. ![]() I'm on a diet, trying to reduce calories and decided to cook dinners without potatoes, rice, pasta etc To give you an idea, below is my meals for this week; Mon - Griddled Steak with salad (leaves, cucumber, celery, sun-dried tomato, couscous (small amount)). Tues - Steamed plaice fillet with griddled asparagus, courgette & broccoli, squeeze of lemon. Wed - Grilled oyster sauce and sesame seed beef skewers with asian cucumber and carrot salad. Thurs - Harissa chicken legs (skinless) with salad (leaves, pomegranate seeds, feta, couscous, cucumber). Fri - Steamed cabbage parcels (filled with thai spiced turkey mince) and thai dipping sauce. Sat - Chicken breast baked in parchment with sage, green beans and tomatoes. Thanks in advance, any other advice welcome too! |

Is bread acceptable? Pittas, pizzas, sandwiches, pasties, pies.
Would you be happy in replacing regualr potatoes with sweet potatoes or butternut squash? Also stews. I usually have potatoes in it but there's no reason to. Pack it full of root veg. You mention couscous. That is kind of a type of pasta so are you happy with that? What about bulgar wheat? I like to have lamb with jewelled couscous/bulgar. Can have it with griddled lamb, chicken or duck or just aubergine. Aubergine I find to be a meaty veg is and is a good substitute if you want a veggie meal. |

Sorry, I didn't mention bread in my post...but I am trying to cut this out also (I know, pretty limited).
Stew is a good idea, as I can also serve with a whole range of vegetables. Thanks for mentioning aubergine too, I don't use that often, so a good idea. Maybe I could do a stuffed and baked aubergine with the flesh, turkey mince etc? Stuffed mushrooms / peppers is another one too. I am including cous cous in salads, but it really is around 2tbsp per person, so not much at all. |

Also remember beans and pulses. Look for recipies where lentils are the base.
How about a chilli con carne. Serve it with a few crackers or tortilla chips. Here is a nice thai mince dish http://www.bbc.co.uk/food/recipes/thai_pork_larb_89452 On the show I saw it on it was served wrapped in lettuce leaves |

Thanks Degs, the thai mince dish is right up my street. I could also use the lettuce wrap idea for taco mince.

all good ideas. you could also try shep pie but with a leek or cauliflower topping.
I know that cutting carbs is cutting cals but i can never quite understand how a friend of mine lost five stone in as many months, living off of potatoes, pasta, rice etc. She ate loads of carbs and the weight just fell off her. Bizarre. |

More basic but it is called Champ , a simple dish made from boiled potatoes mashed with buttermilk and finely chopped raw scallions, serve with fish or meat.

Chilli or bolognese but served with vegetables not pasta or rice.
If you serve runner beans with bolognaise the beans are like a sort of green pasta (kinda!) I make a nice fish soup with a pack of fish pie filling, fish stock, saffron, a dash of cream and parsley that's filling and delicious. Stir fry is a good one as well, all sorts of meat or prawns with veg, just hold the noodles or rice. Chicken Caeser Salad or Tuna Salad Nicoise |

I've recently swapped white potatoes for sweet potatoes in mostly everything and it's fab! They are much better for you (they count towards your 5 a day whereas normal potatoes do not), they have slow release energy so keep you fuller for longer and they are so tasty. We have jacket potatoes, mash, roast potatoes and wedges if we do eat them and I totally love them. When on a diet I used to cook a lot of swede and carrot mash in place of potato as well.
The other thing to try is couscous or bulgar wheat? Both low in fat and tasty depending on how you flavour them. |

Some great ideas here, thanks guys. I will be looking into meals I can cook with swede, celeriac, cauliflower as a topping or accompaniment instead of potato.
I was also thinking a type of potato free frittata with salad would be nice or a crustless quiche. I used to make this slimming world crustless corned beef quiche and it was delicious (if you like corned beef)

Little Gem lettuce leaves are nice stuffed with things, like a wrap - curry, cous cous, minced lamb etc

Are you boycotting all bread types as well - like wraps,tortillas and crackers?
I wish I could cook as well, never think of exciting things to cook like those said above^ |

If you want a takeaway You can order chicken or beef in black bean sauce with egg foo young instead of chips or rice. yum yum

Stuffed Mushrooms. Portobello Mushrooms are great for this. Also Stuffed Peppers
Prawn Cocktail? Steamed/Baked Sea Bream can add what flavours you like to it. Kale and Mushroom and Cashew stir Fry Spring Chicken in a Pot Cajun Chicken with Chunky Bean Salsa Tacos but replace the Tortilla shells with something like a large lettuce/cabbage leaf. Ratatouille Could you use Quinoa as a substitute for the carbs? In fact just look at the Good Food site. Bound to find some other recipes you might like that fit your needs. |

Saw this on tv recently but cant remember where.....
A chef was making a lasagne and using sliced aubergine in place of pasta sheets Also large flat mushrooms stuffed with anything you like - lots of recipes online make a filling meal without the need for any carbs |

Thanks in advance, any other advice welcome too! ![]() We're also trying to reducce our carb intake, we've not cut them completely, but do a number of carb free meals throughout the week. Tonight we're having slow cooked (seared in the griddle pan first) pork chops with a mustard and red grape sauce, served with a roasted veg medly of butternut squash, sweet potato and swede, with garden peas. And one of our fav ever meals is pan-fried salmon/trout, on a bed of parsnip puree, with a sweet chilli, lime and coriander sauce served with green beans. <- is watching too much Masterchef
