They'd have to arrange short-term server rental at reasonable costs, to make it financially viable. But unless a lot of organizations are doing this for many different types of event, the server owners would themselves suffer large peaks and troughs in demand, so it would be expensive for Sky. A bit like creating your own Internet rush hour - and we know how inefficient rush hours are for train and bus companies!
Of course, it could also have been their sign-up and payment system that fell over so that too would need huge amounts of spare capacity to handle big events and similar considerations would apply.
