Bread alternatives for sandwiches?

I've been low-carbing for years and I do miss bread sometimes.

When I do have a sandwich I just make sure I cut the (wholemeal and seeded) bread very thinly, and pack it with filling.
That way you feel you've had sandwiches, but really used very little bread.

OP, if you are cutting out wheat you could try rye bread instead.
Someone I knew used to eat matzo crackers instead of bread - I have never had them myself so no idea what they are made of or taste like.

Not so much sandwiches, but instead of toasted bread at breakfast time, I now have a toasted Rankin Irish potato farl (with some butter on) instead. They're 91% potato.
