scallops

I picked up some scallops in lemon and shallot butter reduced from M&S the other day and am planning on having them for dinner tonight but have no idea what to serve them with, need some inspiration please!

I'm veggie but I do cook them for my hubby & daughter - spaghetti with a little pesto stirred through and some petit pois peas mixed in the pasta is a favourite.

Or a pilaff rice of your choice - either can have a side salad too.

They're great with mushroom rissotto or with a cobb salad.

You really want them fresh. Are they frozen?
If they've been sitting about for a few days (and if reduced probablt sat about even longer) you may get side effects

Scallops go well with chorizo but not if they are off. They don't go with anything then.

Frozen on the day I bought them, defrosted in the fridge - should be safe enough!

Bought them fresh on the 7th, use by was 8th and they've been in the freezer since the 7th
